A full English breakfast is my all-time favorite because I love having “everything I like” neatly arranged on my plate. Keith (my boyfriend) and I usually make one on weekends, when we wake up late and have no idea what to eat. Nothing beats starting your weekend with a whole plate of colorful, nutritious food!

EASIEST KETO MEAL

When I started keto, many friends asked if I had to eat a lot of meat every day. My answer is a big NO! After telling them I follow a vegetarian keto diet, they were surprised and curious about what I eat. So whether or not you’re vegetarian, here’s an idea for you! These are my most-used ingredients on a vegetarian keto diet: cremini mushrooms, portobello mushrooms, eggs, green veggies, and avocado.

The key to a ketogenic diet is keeping carbs low and fat high — you don’t need a lot of meat to get healthy fat! Skip the potatoes and reach for the avocado!

CLASSIC VS VEGETARIAN KETO FULL ENGLISH BREAKFAST

Portobello VS Sausages

Sausages are a staple of a classic English breakfast. Years ago, some creative cooks started using portobello mushrooms for vegan burgers, steaks, meatballs, and more. Season your portobello well and it can taste just as satisfying as sausages! While its protein content can’t match sausages, it still adds protein to your keto meal.

Avocado VS Bacon

Avocado is the main source of fat in this breakfast. While its fat content isn’t close to bacon’s, it offers plenty of nutrients like vitamins C, E, K, and B-6, as well as folate and potassium.

Green Veggies

In a classic full English breakfast, the only vegetable is roasted tomatoes. On a keto diet, it’s always a good idea to include green veggies in your daily meals. I used lettuce since it can be eaten raw (easy!). Feel free to use your favorite greens!

Toast

Toast isn’t included in this recipe, but that doesn’t mean you can’t have bread on keto. Try my Vegan Keto Bread to satisfy that craving! Like the classic version, there are so many combinations — feel free to make your own!

MORE IDEAS FOR A VEGETARIAN KETO FULL ENGLISH BREAKFAST

Tempeh: Believe it or not, I usually make “tempeh bacon” for protein.

Spinach/kale: Make a salad, or fry with ½ to 1 clove of garlic and season with sea salt. Choose organic if possible.

Nuts & seeds: Sprinkling nuts and seeds over your breakfast is a great way to add nutrients. I love pine nuts, walnuts, macadamia nuts, flaxseeds, sunflower seeds, and hemp seeds!

Vegan meat substitutes: I rarely eat vegan meat, but if you really crave sausages, feel free to include store-bought options. Just read the label carefully to make sure it’s keto-friendly.
